Take it to the islands with one ripe pineapple, cut in half lengthwise. Then, using a grapefruit knife and a paring knife, remove the pineapple from the shells. Pat the shells dry with a paper towel and fill with baked Jumbo Coconut Shrimp. Place both pineapple boats on one large platter with the bottom ends facing towards the middle. Chop the pineapple flesh into chunks and scatter it around the boats. Serve with long, wooden toothpicks so guests can spear pieces of pineapple along with the coconut shrimp. |

Here's a shrimp ring with a twist. Serve our Breaded Shrimp on an oval platter with small glass dishes in the middle, full of Seafood Sauce, and Sweet and Sour or Tangy Plum Sauce. Place a small spoon in each dish so guests can place sauce on their plates. Garnish the platter with thin lemon wedges and sprigs of parsley. |
